I don’t remember the last time I found a recipe in a cookbook. Pretty much everything I cook these days comes from Pinterest. And I love it. There are so many amazing recipes on there! And when I make them, I deceive my family into thinking that I’ve got this cooking thing down. It is pretty much the best thing ever.
So for that reason, I’ve decided to start a new recurring post called Pinned It, Made It, LOVED It, where I will share my favorite Pinterest recipes that little old me has actually prepared in my own kitchen! (And if you just can’t wait to see what might make a future post, be sure to follow my Pinterest boards here!)
This inaugural post was inspired by this pin, which features Life in the Lofthouse’s Chicken Corn Chowder.
Potatoes, bacon, corn, chicken, cream . . . oh my!!!! My husband was practically worshiping at my feet when I made this chowder.
Holly from Life in the Lofthouse might be my husband’s new favorite person. And mine.
You can find the full recipe here at her wonderful blog.
I followed her recipe precisely, except that instead of using fresh peeled potatoes, I used two bags of Ore Ida’s Potatoes O’Brien. This was a total time saver and the chowder turned out wonderfully even though it lacked fresh potatoes.
What also made this recipe a snap to put together is the fact that I had shredded, cooked chicken already in the freezer. I was able to just add it in without having to go through the step of cooking chicken at the time of preparing the chowder. I recommend having shredded, cooked chicken in your freezer at all times!
Make this chowder before spring gets here. Seriously!
